Crocus apricot jam consists of halves and large pieces of fruit bathed in a thick syrup. It's a great addition to toast, cakes and pastries, and cottage cheese. Their size depends on the weather conditions of a given year—smaller fruits contain more water and decompose more quickly during cooking. The sugar in the jam preserves the natural color of the apricots, highlights their intense aroma, and preserves the product. A small amount of gluten-free glucose syrup prevents the jam from becoming saccharified.
