Ground galangal (Alpinia) is one of the herbs recommended in Saint Hildegard's diet. This spice is suitable for meats (including smoked meats), Asian, and Indian dishes. Galgantu rhizomes contain the essential oils alpinone and gaganlo, which are responsible for a pungent, bitter taste somewhat reminiscent of ginger.

Serving suggestion: Add 1 to 3 pinches of ground galgan to dishes such as meat and vegetables. It can also be added to marinades, pumpkins, fruit compotes, etc.
