Nigella - what is it?

Nigella [in Latin: Nigella sativa] is a plant commonly found in Southeastern Europe and Western Asia. The raw material of this plant consists of its small black oily seeds. Their aroma, when rubbed, somewhat resembles that of oregano. Cumin is a seed plant belonging to the buttercup family. Its peculiarity lies in its characteristic blue flowers, which often decorate garden beds and enrich bouquets. But it is especially known worldwide for its seeds, used as spices and medicinal raw materials. They are hidden in what is commonly called the pod and are sometimes called black cumin due to their appearance and taste.

Cumin - culinary uses

Nigella seeds are characterized by a pungent, slightly bitter and spicy taste, intermediate between poppy and pepper. It is interesting to note that cumin can replace pepper in cooking for people with sensitive stomachs, as this plant does not irritate the mucous membrane. That is why, like pepper, cumin has a very rich culinary application. It perfectly enhances the taste of meats such as mutton, lamb, game, or poultry.
